Production
The grapes are carefully selected by hand and transferred to the winery. Pre-fermentation maceration takes place at 8°C in stainless steel tanks. Both native and selected yeasts are used in the fermentation process for added complexity. After fermentation, malolactic fermentation occurs in contact with oak. 70% of the wine is aged for 12 months in French and American oak barrels. The final blend is made with the extra 30%, which has been preserved in stainless steel tanks.
